Almond Strawberry Pikelets

Almond Strawberry Pikelets



  • 3-4 frozen strawberries, defrosted and mashed
  • three heaped tablespoons of lentil flour
  • two heaped tablespoons of almond meal
  • 1 heaped tablespoon of psyllium husk
  • 1 teaspoon olive oil
  • a little water
Mix all together and add water to a firm batter. Put spoonfulls of batter in a flat non stick frypan and cook until golden. Enjoy.
